Tapenade is a rich olive spread popular in the Mediterranean. It's quite easy to make at home.

Time to make: 10 minute

  • 20 pitted Kalamata olives, coarsely chopped
  • 1 Tbsp rinsed, drained, and chopped capers
  • 1 tsp fresh lemon juice
  • 2 tsp olive oil
  •  1/2 tsp anchovy paste (optional)
  •  Fresh cracked black pepper

Combine all the ingredients together in blender or cuisinart. Mix well and refrigerate. Use within 2 weeks.

A beautiful and simple salad served at a restaurant in Uzes, France. This is so gorgeous and easy to make.

A simple layering of roquette and other greens, mozzarella, tomatoes, sprinkled with parmesean cheese and a few fresh olives freshly purchased at the market. Add four 1/2 slices of dark (or any kid of great bread) topped with green and black tapenade. Tapenade is an olive spread that you can buy or make easily.
