Salad with French Tapenade

Tapenade is a rich olive spread popular in the Mediterranean. It's quite easy to make at home.

Time to make: 10 minute

Ingredients:

  • 20 pitted Kalamata olives, coarsely chopped
  • 1 Tbsp rinsed, drained, and chopped capers
  • 1 tsp fresh lemon juice
  • 2 tsp olive oil
  •  1/2 tsp anchovy paste (optional)
  •  Fresh cracked black pepper

Preparation:

Combine all the ingredients together in blender or cuisinart. Mix well and refrigerate. Use within 2 weeks.

A simple layering of roquette and other greens, mozzarella, tomatoes, sprinkled with parmesean cheese and a few fresh olives freshly purchased at the market.
